Ingredients:
- 3.5 oz (100g) textured soy protein (TVP)
- 2 cups (500ml) water
- 1/2 lemon, juiced
- 1 tablespoon extra-virgin olive oil
- 1/2 medium onion, minced
- 2 cloves garlic, minced
- 3 tablespoons mayonnaise
- 2 tablespoons cream cheese or sour cream
- Salt to taste
- Fresh parsley and scallions, chopped, to taste
- 1 large egg
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 small onion, finely diced
- 2 tablespoons fresh parsley and scallions, chopped

- 2 tablespoons all-purpose flour
- Butter (for the bun)
- Hamburger buns
- Lettuce and tomato (optional)
How to Prepare the Soy Burger:
- Start by hydrating the soy: boil 2 cups of water, add the lemon juice and the 3.5 oz of textured soy protein. Let it hydrate for 10 minutes, then drain well and discard the water.
- In a skillet, heat a drizzle of olive oil and sauté the 1/2 medium onion and 2 minced garlic cloves until golden. Set aside.
- In a blender or food processor, combine the mayonnaise, cream cheese, a pinch of salt, and the sautéed onion and garlic mixture. Blend until smooth, then stir in fresh parsley and scallions. Refrigerate until serving.
- After hydrating the soy, squeeze it tightly to remove excess moisture. In a bowl, mix the soy with the egg, smoked paprika, salt, finely diced onion, fresh parsley and scallions, black pepper, and flour. Mix thoroughly.
- Line a burger press or a small ring mold with plastic wrap, add the soy mixture, and press firmly to form the patties. Place in the freezer for 10 minutes to help them firm up.
- Toast the buns in a skillet with a little butter until golden brown.
- In the same skillet, heat a drizzle of oil over medium-high heat. Remove the plastic wrap from the patties and fry until golden brown on both sides.
- Assemble your burger with lettuce, tomato, and the prepared creamy garlic-onion sauce.
