Ingredients for Stuffed Bell Peppers:

  • Assorted bell peppers (green, yellow, red)
  • 1.1 lbs (approx. 500g) lean ground beef (sirloin or ground chuck)
  • 2 cloves garlic, minced
  • 1 onion, finely diced
  • 1 carrot, finely grated or processed
  • 1 stalk celery, finely diced
  • 2 tbsp leeks, sliced
  • 1 tomato, diced
  • Salt, to taste
  • Black pepper, to taste
  • 1 tsp paprika
  • 2 tbsp cream cheese or mascarpone
  • Shredded mozzarella, to taste
  • Chopped green onions, to garnish

How to Make Stuffed Bell Peppers:

  1. Start by finely chopping or processing the garlic, onion, carrot, and celery.
  2. In a large skillet, sauté the garlic in a little oil until fragrant.
  3. Add the ground beef and cook thoroughly until browned and the excess liquid has evaporated.
  4. Season with salt, black pepper, and paprika.
  5. Stir in the leeks, the chopped tops of the bell peppers, and the tomato.
  6. Cook for a few more minutes until all ingredients are well combined.
  7. Turn off the heat and stir in the cream cheese until smooth and creamy.
  8. Clean the bell peppers by removing the tops and seeds. Generously fill them with the beef mixture.
  9. Top each pepper with plenty of shredded mozzarella.
  10. Preheat your oven to 425°F (approx. 220°C) and place the stuffed peppers in a baking dish.
  11. Bake for 25 minutes. Keep an eye on them—if the peppers are still firm, bake for an additional 5-10 minutes.
  12. Once cooked, remove from the oven and let them rest briefly. The peppers should be tender and the cheese golden and bubbly.
  13. Serve warm and enjoy this explosion of flavor!

Pro Tip:

For the most succulent and flavorful results, make sure to brown the ground beef thoroughly. This removes excess moisture, ensuring your peppers don’t get soggy.
