Instructions:

  1. Soak the white beans in cold water overnight, or boil in water for approximately 3 hours until tender.
  2. Pressure cook the beans with the clove-studded onion, leek, carrot, and bouquet garni for 25 minutes.
  3. In a large pan, fry the bacon until golden. Add the diced onion, celery, garlic, sausage, and a bay leaf.
  4. Cook for 5 minutes, then add the tomatoes. After another 5 minutes, stir in the white wine, orange juice, water (or stock), and bouillon cubes.
  5. Remove from heat and transfer the mixture into the pot with the cooked beans.
  6. Add the chili sauce and salt, stirring gently to avoid mashing the beans. Serve hot.
