  • 4 cups water;
  • 3 large green papayas;
  • 9 cups (US) granulated sugar;
  • Clove (optional)

How to Make Papaya Compote:

  1. Cut each papaya open and remove the seeds;
  2. Grate them thoroughly using a box grater;
  3. Rinse and squeeze out excess moisture;
  4. Place grated papaya in a large saucepan;
  5. Add sugar and mix well;
  6. Pour in water and stir;
  7. Bring to a boil, stirring frequently;
  8. Simmer on medium heat until the mixture becomes a thick syrup;
  9. Lower heat, add cloves if desired, and cook for 5 minutes;
  10. Let cool completely before transferring to an airtight container;
  11. Serve chilled or store in the refrigerator for up to 2 weeks.
