  • 2.2 lbs (1 kg) dried chickpeas
  • 1.1 lbs (500 g) beef shank (músculo)
  • 2.2 lbs (1 kg) chicken drumettes
  • 9 oz (250 g) bacon, diced
  • 9 oz (250 g) smoked sausage (paio or linguica calabresa)
  • 7 oz (200 g) sweet potato, medium diced
  • 10.5 oz (300 g) arracacha (or parsnips), sliced
  • 2 medium russet potatoes, diced
  • 2 carrots, sliced
  • 3 tomatoes, roughly chopped
  • 1 yellow bell pepper, chopped
  • 1 red bell pepper, chopped
  • 9 oz (250 g) pumpkin or butternut squash, cubed
  • 2 ears of corn, cut into rounds
  • 3/4 cup (200 ml) beer
  • Juice of 1 Persian lime
  • 5 bay leaves
  • 2 tbsp lard (or oil)
  • 1 tsp annatto powder (colorau)
  • 1 tsp sweet paprika
  • 1/2 tsp black pepper
  • 1 tsp cumin
  • 1 tsp salt
  • 1/3 tsp sugar
  • 1 tbsp all-purpose seasoning blend
  • Water, enough to cover

Instructions:

  1. Hydrate the chickpeas: Rinse the chickpeas well and place them in a large bowl. Cover with plenty of water (at least 2 inches above the grains). Let them soak for at least 6 hours, or preferably overnight.
  2. Cook the chickpeas: After soaking, drain and place the chickpeas in a pressure cooker. Cover with fresh water and cook for 15 minutes once the pressure builds. Set aside.
  3. Prepare the beef shank: Season the beef with annatto, pepper, cumin, salt, sugar, and 1 tbsp of seasoning blend. In a pressure cooker, heat 1 tbsp of lard and brown the meat. Add the beer and enough water to cover. Cook for 30 minutes after reaching pressure. Set aside.
  4. Season the chicken: Place the chicken drumettes in a bowl. Add the lime juice, annatto, pepper, 1/2 tbsp of seasoning, and 1 1/2 tsp salt. Mix well and chill in the refrigerator.
  5. Prep the vegetables: Chop the sweet potato, arracacha, potatoes, carrots, tomatoes, bell peppers, squash, and corn.
  6. Start the stew: In a large heavy-bottomed pot, fry the bacon and sausage in 2 tbsp of lard until golden. Add the seasoned chicken and sauté until browned.
  7. Combine: Add the cooked beef (with its liquid), vegetables, and chickpeas to the pot. Add water until it covers the ingredients by one inch. Add bay leaves, pepper, cumin, paprika, and remaining seasoning. Mix well.
  8. Simmer: Cook over medium heat for about 1 hour, or until all vegetables and meats are tender.

Tips for Success:

Puchero is incredibly versatile. Feel free to swap ingredients based on what you have. Instead of sweet potato, you can use cassava (yuca). Other meats like pork or salted beef work beautifully, too. This dish is even better the next day, making it perfect for meal prepping!

Feel free to use your favorite all-purpose seasoning blend or a mix of garlic and onion powder. The secret is to ensure everything is well-seasoned for a deep, harmonious flavor.
