A quick and practical recipe, perfect as an appetizer or side dish, it might even become the main course depending on the filling. Stuffed Tomatoes is today’s suggestion. Let’s get started!

Ingredients to prepare the stuffed tomatoes:

  • 4 large tomatoes;
  • Fresh parsley and scallions to taste;
  • Chives to taste;
  • Shredded mozzarella cheese to taste;
  • 3 eggs;
  • Black pepper to taste;
  • Salt to taste;
  • 3 tablespoons of cream cheese;
  • Olive oil to taste.

How to prepare the stuffed tomatoes:

  1. First, cut off the top of the tomato as if removing a lid;
  2. Next, remove the pulp and seeds using a spoon;
  3. Then, fill each tomato with chopped fresh parsley, chives, and shredded mozzarella;
  4. Add one raw egg into each tomato;
  5. Season with salt and black pepper;
  6. Top with cream cheese, additional mozzarella, and chopped chives;
  7. Grease a baking dish or oven tray with olive oil;
  8. Bake in a preheated oven at 392°F (200°C) for about 25 minutes;
  9. Carefully remove and serve!

Suggestions:

You can use the tomato lid to cover them while baking or chop it for salads. Feel free to vary the fillings based on your preference!
