Ingredients:
- 1 free-range chicken (approx. 3.3 lbs), skinless and cut into pieces
- Juice of 1 lemon
- Hot water (for cleaning)
- 1 tbsp paprika
- 1 tbsp ground cumin
- 1 tbsp chimichurri seasoning
- 1 tbsp black pepper
- 2 tbsp vinegar or lemon juice
- 1 tbsp salt
- 5 garlic cloves, minced
- 1 red bell pepper and 1 yellow bell pepper, chopped
- 2 tomatoes, seeded and diced
- 1 cup chopped green onions (scallions)
- Fresh parsley, to taste
- 2 carrots, sliced
- 2 potatoes, sliced
How to Make Chicken Stew with Vegetables:
- Clean the chicken: Rub the chicken pieces with lemon juice and hot water to remove any strong odors. Rinse thoroughly with cold water.
- Prepare the marinade: In a bowl, mix the paprika, cumin, chimichurri, and black pepper. Season the chicken with this mix, adding the vinegar (or lemon juice), salt, and minced garlic. Toss well to coat every piece evenly and let it marinate in the refrigerator for one hour.
