Ingredients for this Easy Beef Wellington:

  • 1 tbsp heavy cream;
  • 3 tbsp unsalted butter;
  • 8 small mushrooms, finely chopped;
  • 2 eggs, beaten;
  • ½ tbsp red wine or grape juice;
  • 4 tbsp breadcrumbs (or crushed saltine crackers);
  • 1.1 lbs (500g) lean ground beef;
  • 1 small onion, finely minced;
  • 4 garlic cloves, minced;
  • Mozzarella cheese (optional);
  • 1 tsp salt;
  • 2 tbsp dried or fresh parsley;
  • 2 sheets puff pastry, thawed according to package instructions;
  • Salt and pepper to taste;
  • 1 tsp fresh basil, chopped.

How to make Easy Beef Wellington:

  1. Preheat your oven to 400°F (200°C);
  2. In a mixing bowl, combine the eggs, ground beef, breadcrumbs, parsley, heavy cream, and salt;
  3. Mix until well incorporated;
  4. Place a large skillet over medium heat;
  5. Add the butter and let it melt;
  6. Sauté the mushrooms and onion until tender;
  7. Add the garlic and basil, cooking until fragrant;
  8. Pour in the red wine and stir well;
  9. Increase the heat slightly and cook for a few minutes until the liquid reduces;
  10. Remove from heat and let the mixture cool completely;
  11. Lightly grease a baking sheet with olive oil;
  12. Lightly flour a flat surface and lay out the puff pastry sheets;
  13. Cut each sheet into quarters;
  14. Spread a portion of the mushroom mixture onto the center of each square;
  15. Sprinkle a generous amount of mozzarella cheese over the mushrooms;
  16. Shape the meat mixture and place it over each square;
  17. Fold the corners of the pastry to seal;
  18. Place on the baking sheet and score an “X” on the top of each Wellington;
  19. Brush the tops with the remaining beaten egg;
  20. Bake in the preheated oven for about 30 minutes, or until golden brown;
  21. Remove from the oven and let them rest for a few minutes;
