Ingredients for homemade rice crackers:
- 8 oz (approx. 1 ½ cups) cooked rice;
- 3 tablespoons sour cassava flour (tapioca starch);
- 1 tablespoon extra-virgin olive oil;
- Salt to taste.
How to make homemade rice crackers:
- Preheat your oven to 350°F (180°C) before you begin;
- Line a baking sheet with parchment paper;
- In a bowl, mash the cooked rice with a fork until you have a fairly uniform texture;
- Add the sour cassava flour to the rice and mix well;
- Add the olive oil and mix again until all ingredients are well incorporated;
- Season with salt to taste and give it one final mix;
- Using your hands, shape the dough into small, flattened discs, or use a mold if you prefer;
- Place the crackers on the prepared baking sheet and bake in the preheated oven for approximately 15–20 minutes, or until golden and crispy;
- Remove from the oven and let them cool completely before serving;

Tips:
If you prefer extra crispy crackers, roll or press the dough even thinner before baking. If you prefer them a bit softer on the inside, keep them slightly thicker.
