Ingredients for the vegan brigadeiro:
- 6.7 oz (approx. 190g) cooked taro root (yam);
- 3.4 fl oz (100ml) rice milk;
- 1 tbsp cornstarch;
- 1 tbsp rice flour;
- 2 tbsp unsweetened cocoa powder;
- 3/4 cup demerara sugar (or organic cane sugar);
- Coconut oil (for greasing your hands);
- Vegan chocolate sprinkles for decoration (optional).
How to make vegan brigadeiro:
- First, process the cooked taro with the rice milk in a food processor or blender until smooth;
- Next, add the cornstarch, rice flour, and cocoa powder, and pulse to combine;
- Transfer the mixture to a saucepan;
- Stir in the demerara sugar;
- Cook over low heat, stirring constantly until the mixture thickens and easily pulls away from the bottom of the pan;
- Transfer the mixture to a plate and refrigerate for 3 hours (or until firm enough to roll);
- Once chilled, grease your hands lightly with coconut oil and roll the mixture into small balls;
- Roll in vegan sprinkles if desired and enjoy!
Tips:
You can also roll them in extra cocoa powder or vegan chocolate shavings. Feel free to swap rice milk for another plant-based milk; just ensure you use a thinner variety to maintain the right consistency.
