  7. Place a fine-mesh strainer over a bowl and line it with a clean cheesecloth or a fine-weave kitchen towel. Carefully pour the mixture into the strainer to separate the curds from the whey.
  8. Let the ricotta drain for about 40 minutes to an hour, depending on your desired consistency. The longer it drains, the firmer the ricotta will be.
  9. Once drained, transfer the ricotta to an airtight container. Taste and adjust the salt if needed.
  10. Store in the refrigerator for up to five days.
