Ingredients for Sugar-Free Banana Pudding:

Pudding:

  • 4 very ripe bananas
  • 4 large eggs
  • 1 ⅔ cups (approx. 400ml) milk

Syrup:

  • 1 cup granulated sugar-free sweetener (sucralose-based)
  • ½ cup water
  • 1 tablespoon vinegar (white vinegar)

How to make Sugar-Free Banana Pudding:

Pudding:

  1. First, mash the bananas well until they form a smooth puree; set aside.
  2. In a bowl, beat the eggs thoroughly until uniform.
  3. Add the milk to the eggs and mix well.
  4. Add the banana puree to the mixture, combine well, and set aside.

Syrup:

  1. In a saucepan, combine the sweetener, half of the water, and the vinegar.
  2. Cook over medium heat.
  3. Stir until the liquid thickens and darkens to a syrup consistency.
  4. It will begin to stick to the bottom and brown. Watch closely so it doesn’t burn! Once it reaches a caramel color, remove from heat, scrape the bottom, and carefully add the remaining water. Mix well.
  5. Return to low heat for a moment to thicken slightly if needed.
  6. Turn off the heat and prepare for assembly.

Assembly:

  1. Add enough water to your pressure cooker to reach about halfway up the sides of your pudding mold (do not submerge the mold).
  2. Ensure you are using a mold that fits inside your pressure cooker.
  3. Place the empty mold inside the pressure cooker with the water.
  4. Pour the prepared syrup into the bottom of the mold.
  5. Slowly pour the banana pudding mixture over the syrup.
  6. Cover the mold tightly with aluminum foil and cook for 15 minutes under pressure.
  7. Once cooked, let it cool down slightly, then place it in the freezer for a few minutes to set.
  8. Carefully remove the foil and invert onto a plate.
  9. Enjoy!
