Dough:

  • 1 Measuring cup (8 oz) of water

How to Make Goiabada Roll Cake:

  1. Preheat oven to 350°F (180°C).
  2. Separate egg yolks and whites.
  3. Beat egg whites until stiff peaks form.
  4. Add yolks one at a time and continue beating.
  5. Gradually add sugar.
  6. Slowly incorporate flour until blended.
  7. Add vanilla extract.
  8. Beat to combine, then turn off mixer.
  9. Line a 12×16-inch pan with parchment paper, greasing edges for easy release.
  10. Pour batter evenly into pan and spread flat.
  11. 15-20 minutes, until golden.
  12. While cake bakes, cube goiabada and cook with water in a pot over low heat until dissolved.
  13. Insert toothpick to check doneness.
  14. Trim cake edges.
  15. Spread chilled goiabada filling evenly over cake.
  16. Roll cake using parchment paper as aid.
  17. Transfer to serving plate, trim ends, and dust with powdered sugar.
