Healthy Spinach Pancakes Recipe

Ingredients for Spinach Pancakes:

  • 1 tablespoon extra-virgin olive oil (for greasing);
  • 1 cup tapioca starch (polvilho doce);
  • 2 large eggs;
  • 1 cup milk (dairy or plant-based);
  • 2 cups fresh spinach, chopped;
  • Salt to taste;
  • 1 cup rice flour.

How to make Spinach Pancakes:

  1. In a blender, add the eggs and spinach and blend until smooth;
  2. Add the rice flour, tapioca starch, milk, and salt, and blend again until well combined;
  3. Lightly grease a non-stick skillet with the olive oil;
  4. Once heated, pour a small ladle of the batter into the skillet;
  5. Cook until the edges start to brown, then flip and cook the other side until golden;
  6. All done! Now, just add your favorite fillings and enjoy!

Filling Suggestions:
