- 2 1/2 cups granulated sugar (divided);
- approx. 7 tablespoons boiling water;
- 4 cups roasted and ground peanuts (unsalted);
- 1/2 cup dulce de leche (or milk caramel).
How to make homemade paçoca:
- First, grind the peanuts until they reach a coarse, flour-like consistency, then set aside;
- In a saucepan over low heat, add half of the sugar and melt until it turns into a golden caramel;
- Once caramelized, carefully add the boiling water and stir until the caramel is fully dissolved and incorporated;
- Add the remaining sugar into the caramel while keeping the heat on low;
- Next, stir in the dulce de leche until completely smooth and combined;
- Turn off the heat and fold in the ground peanuts;
- When the mixture begins to thicken, spread it evenly into a greased pan;
- Let it set slightly, then score into squares or bars before it cools completely to prevent it from cracking when cut;
- Wait for it to cool down fully while still in the pan;
- Once firm, remove from the pan and enjoy!
