Ingredients for the Pumpkin Pie:

  • 1/2 cup unsalted butter, frozen;
  • 1 1/4 cups all-purpose flour;

  • 1 cup brown sugar;
  • 1 1/2 tablespoons all-purpose flour;
  • 2 eggs;

  • 2 cups cooked, mashed pumpkin purée (from about half a pie pumpkin).

How to Make the Pie Crust:

  1. Place the butter in the freezer for 30 minutes before starting.
  2. In a food processor or bowl, mix the flour, salt, and granulated sugar.
  3. Grate the frozen butter into the flour mixture.
  4. Pulse or mix until combined.
  5. Gradually add the ice-cold water, mixing until the dough starts to come together and can be formed into a ball.
  6. Add more water by the teaspoon if necessary.
  7. Shape the dough into a flat disk.
  8. Wrap in plastic wrap and refrigerate while you prepare the filling.
  9. Preheat your oven to 400°F (200°C).

Filling:

  1. In a bowl, mix the brown sugar and flour well.
  2. Whisk the eggs and add them to the sugar mixture, stirring until incorporated.
  3. Stir in the cinnamon, nutmeg, pumpkin purée, and milk (or cream) until smooth.

Assembly:

  1. Roll out the chilled dough into a large circle, fit it into your pie dish, crimp the edges, and refrigerate for another 10 minutes.
  2. Pour the filling into the prepared crust.
  3. Bake at 400°F (200°C) for 10 minutes.
  4. Reduce the oven temperature to 350°F (180°C).
  5. Bake for an additional 45 minutes, or until the center is set.
  6. Let cool completely before serving. You may chill it in the refrigerator if preferred.

Keep an eye on the crust while baking. If the edges start to brown too quickly, cover them with a pie shield or aluminum foil for the remainder of the baking time.
