Today we’re making an open-faced sandwich cake, an easy and flavorful dish you can customize with whatever ingredients you have at home. Let’s get started!
Ingredients for the sandwich cake:
- Shredded cooked chicken breast to taste;
- 1 Can of drained sweet corn;
- 1 Cup (240ml) water;
- ½ teaspoon salt;
- Pinch of black pepper;
- 1 Cup creamy spread cheese;
- ½ cup chopped green olives;
- 2 Cups mayonnaise for assembly;
- 2 Packets of sliced bread (without crusts);
- ¼ cup coarsely grated carrot;
- Pinch of salt for carrot;
- Pinch of black pepper for carrot;
- 2 teaspoons extra-virgin olive oil;
- 400g mayonnaise for topping;
- For garnish: Cherry tomatoes, green olives, and crispy shoestring potatoes.
How to make the sandwich cake:
- Blend corn and water in a blender until smooth;
- In a large bowl, combine shredded chicken, blended corn, and creamy spread cheese;
- Add chopped green olives and mix well;
- Remove crusts from bread slices;
- Line a large dish with plastic wrap and lay down bread layer;
- Spread mayonnaise evenly over bread using a spatula;
- Add chicken mixture on top;
- Season carrot and spread over chicken layer;
- Add another bread layer;
- Repeat chicken and bread layers;
- Cover with plastic wrap and press gently;
- Invert onto a shallow serving platter;
- Spread a generous layer of mayonnaise over the cake;
- Top with crispy shoestring potatoes and garnish sides with cherry tomatoes and olives;
- Chill in refrigerator until serving!
Variations:
