  • ¾ cup (100g) raw cashews (soaked in hot water for 15 minutes);
  • 1 ⅔ cups (400ml) water;
  • 1 tbsp extra-virgin olive oil;
  • ½ tsp salt;
  • 1 pinch nutmeg.

Topping:

  • 1 tbsp extra-virgin olive oil;
  • approx. 1 cup (250g) sliced zucchini;
  • 1 tomato, diced;
  • ¼ tsp salt;
  • 1 pinch dried oregano.

How to make Vegan Zucchini Quiche:

  1. Start by preparing the crust;
  2. In a mixing bowl, combine the chickpea flour, rice flour, and salt;
  3. Add the water and oil;
  4. Mix until a smooth dough forms;
  5. Roll out the dough and press it into the bottom and up the sides of a pie dish;
  6. Set the prepared crust aside;
  7. For the filling: In a blender, process the soaked cashews with the 400ml of water until completely smooth and creamy;
  8. Add the olive oil, salt, and nutmeg, and pulse to combine well;
  9. In a skillet, heat the olive oil and sauté the zucchini and tomato for a few minutes until tender. Season with salt and oregano;
  10. Pour the cashew cream into the prepared crust, then arrange the zucchini and tomato slices on top; they will sink slightly but remain visible on the surface;
  11. Bake in a preheated oven at 350°F (180°C) for about 30 minutes, or until the quiche is golden brown and firm to the touch;
