Ingredients for Beer-Braised Pork Loin:

  • 10 cloves garlic, minced;
  • Juice of 5 lemons;
  • 2 tablespoons black pepper;
  • ½ cup dried oregano;
  • 3.3 lbs (approx. 1.5 kg) lean pork loin;
  • 3 cans (12 oz each) light lager beer;
  • 3 onions, chopped;
  • 1 bunch fresh parsley and scallions, chopped;
  • 1 tablespoon salt.

How to Prepare Beer-Braised Pork Loin:

  1. In a blender, combine all the seasoning ingredients (salt, black pepper, fresh parsley and scallions, onion, garlic, oregano, and lemon juice).
  2. Pulse until smooth and set aside.
  3. Rinse the pork loin and butterfly it slightly if necessary to create an even, rectangular shape for roasting.
  4. Place the pork in a large roasting pan.
  5. Pour the marinade from the blender over the meat, ensuring it is well coated.
  6. Pour the beer over the loin, cover tightly with aluminum foil.
  7. Refrigerate for up to 3 days (you can cook it the same day, but marinating allows for deeper flavor).
  8. Remove from the refrigerator and let it sit until it reaches room temperature before roasting.
  9. Preheat your oven to 350°F (180°C). Roast, covered with foil, for 30 minutes.
  10. Carefully remove the foil and roast for another 30 minutes to golden the surface.
  11. Once cooked through, let it rest, slice, and serve. Enjoy!
