Ingredients for one microwave pear mug cake:

  • 1 ripe pear;
  • 1 large egg;
  • 3 Tbsp old-fashioned rolled oats, blitzed into flour;
  • 1 Tbsp coconut flour;
  • 1 Tbsp extra-virgin olive oil;
  • 1 Tbsp honey;
  • ½ tsp baking powder.

How to make a microwave pear mug cake:

  1. Grab an 8-oz (250 ml) microwave-safe mug or glass dish and set aside.
  2. In a small bowl whisk the egg until uniform.
  3. Stir in the oat “flour” until combined.
  4. Add the coconut flour and mix again.
  5. Drizzle in the oil and honey; stir until smooth.
  6. Sprinkle in the baking powder and fold gently—don’t over-mix.
  7. Dice half the pear into ¼-inch cubes; thinly slice the other half.
  8. Pour half the batter into the mug, scatter the diced pear over it, then top with the remaining batter.
  9. Arrange the pear slices on top and dust with a pinch of cinnamon if you like.
  10. Microwave on high for 2 min 30 sec–3 min (700–1000 W). The cake should rise and feel springy to the touch; if still wet, add 15-sec bursts until done.
  11. Let cool 1 minute, then enjoy straight from the mug or invert onto a plate.
