  • 1 1/4 teaspoons agar-agar powder (vegetable gelatin)

How to Make Hibiscus Jelly:

  1. In a saucepan, bring the water to a boil.
  2. Turn off the heat and add the hibiscus flowers. Let them steep for about two hours.
  3. Add the Stevia sweetener and, if desired, the ginger or lemon zest. Mix well.
  4. Return the pan to low heat and add the agar-agar powder. Cook for 4 minutes, stirring constantly.
  5. Turn off the heat and let the mixture rest for 5 minutes.
  6. Pour the mixture into individual serving dishes or silicone molds.
  7. Optional: add fresh fruit pieces to the jelly before placing it in the refrigerator.
  8. Refrigerate for at least 5 hours until completely set.
  9. Serve chilled and enjoy this delicious anti-inflammatory dessert.

Pro Tip:

If you don’t have agar-agar or prefer not to use it, you can substitute it with unflavored gelatin. You may also swap the Stevia for your preferred sweetener.
