We’ve brought you an irresistible recipe for gluten-free and dairy-free bread. This loaf is made with taro (yam), which makes it incredibly soft, fluffy, and flavorful. Learn how to prepare this delicious treat quickly and easily. Let’s get started!

Ingredients for Gluten-Free and Dairy-Free Bread:

  • 1 cup rice flour
  • 1/2 cup cornstarch
  • 1/2 cup sweet cassava starch (tapioca flour)
  • 5 tbsp golden flaxseed meal
  • 1 1/2 tbsp chia seeds
  • 1 packet active dry yeast
  • 1 tbsp demerara sugar (or granulated sugar)
  • 2 tsp xanthan gum
  • 3-4 medium taro roots (about 5 oz, chopped)
  • 1 cup warm water
  • 3 tbsp extra-virgin olive oil
  • 2 eggs
  • 1 tsp salt

How to Prepare Gluten-Free and Dairy-Free Bread:

  1. In a bowl, mix the rice flour, cornstarch, sweet cassava starch, golden flaxseed meal, chia seeds, dry yeast, demerara sugar, and xanthan gum. Ensure all dry ingredients are well combined.
  2. Peel and chop the taro roots into small pieces until you have 1 cup. Add the chopped taro, warm water, olive oil, and eggs to a blender and pulse for 1-2 minutes, until you have a smooth, homogeneous batter.
  3. Pour the liquid mixture from the blender into the bowl with the dry ingredients and stir until the dough is completely uniform. Add the salt and mix again.
  4. Grease a loaf pan with olive oil and pour the bread dough into it. Smooth the surface with a moistened spoon to prevent sticking.
  5. Cover the pan with a damp cloth and let the dough proof in a warm place for about 15-20 minutes. After that time, remove the cloth and let it proof for another 30-35 minutes, or until the dough reaches the top of the pan.
  6. Preheat your oven to 400°F (200°C). Place the pan with the dough in the oven and bake for approximately 45 minutes, or until the bread is golden brown.
  7. Remove the bread from the oven and let it cool for about 15 minutes before unmolding. Then, transfer the loaf to a wire rack to cool completely and allow the crust to crisp up.
  8. Now, just enjoy your delicious gluten-free and dairy-free bread!

Pro Tip:

An important tip for preparing this gluten-free and dairy-free bread is to ensure all ingredients are thoroughly mixed. Xanthan gum is essential for this recipe, as it improves the texture and elasticity of the dough, replacing the function of gluten found in wheat flour. Be sure to mix the flours and the xanthan gum well to prevent any gummy lumps from forming in the dough.

Another tip is to chop the taro roots into very small pieces before measuring. This ensures you get an accurate cup measurement and that the pieces fill the space properly, resulting in a balanced and delicious loaf.
