Ingredients for the Romeo and Juliet Cheesecake:

Crust:

  • 3.5 oz (approx. 100g) Graham crackers or Maria cookies;
  • 3 tbsp Unsalted butter, melted.

Filling:

  • 5 tbsp Granulated sugar;
  • Zest of half an orange;
  • 1/2 cup Heavy cream (drained);
  • 7 oz (200g) Ricotta cheese;
  • 2 Large eggs.

Guava Topping:

  • 2 Fresh, ripe guavas (peeled and chopped);
  • 3 tbsp Granulated sugar.

How to make the Romeo and Juliet Cheesecake:

  1. Start with the crust;
  2. In a food processor, pulse the cookies until they form fine crumbs;
  3. Add the melted butter and mix until the texture resembles wet sand;
  4. Press the mixture evenly into the bottom of a 6-inch (16 cm) springform pan;
  5. Refrigerate for 30 minutes;
  6. Preheat your oven to 350°F (180°C) and pre-bake the crust for about 5 minutes, or until lightly toasted;
  7. Meanwhile, prepare the filling;
  8. Mash the ricotta with a fork and pass it through a fine-mesh sieve for a smoother texture;
  9. Whisk in the remaining filling ingredients until smooth;
  10. Pour the ricotta mixture over the crust and bake at 350°F (180°C) for about 35 minutes, or until a toothpick inserted in the center comes out clean;
  11. Remove from the oven, let it cool to room temperature, and unmold;
  12. Prepare the guava topping;
  13. In a blender, blend the peeled, chopped guavas with 1 cup of water and the sugar;
  14. Strain the mixture and transfer it to a saucepan;
  15. Cook over medium heat, stirring occasionally, for about 10 minutes until you reach a creamy, thick consistency;
  16. Let the sauce cool completely;
  17. Drizzle the creamy guava sauce over the cheesecake just before serving;
  18. Enjoy!

Pro Tip:

For a special touch, you can add small chunks of guava paste (goiabada) into the middle of the filling before baking, creating a delicious texture contrast.
