Instructions:

Shrimp Stock:

  1. In a pot, heat the olive oil and brown the washed shrimp shells.
  2. Add the remaining stock ingredients; feel free to add other aromatics like carrots or rosemary if you like.
  3. Pour in the room temperature water, reduce the heat once it starts to simmer, and let it cook for about 40 minutes. Strain and keep the stock warm.

Shrimp Risotto:

  1. Season the shrimp with salt and pepper.
  2. In a large skillet, heat the olive oil and sear the shrimp quickly. Remove and set aside.
  3. In the same skillet, sauté the onion, add the rice, and then deglaze with the white wine.
  4. Begin adding the warm shrimp stock, one ladle at a time, stirring gently until the rice is al dente.
  5. Stir in the cooked shrimp and Parmesan cheese, then adjust salt and pepper to taste.
  6. Finish with the cold butter to give the risotto a beautiful, glossy finish.
