Ingredients for your Strawberry Cheesecake:
- 1 1/4 cups graham cracker crumbs;
- 1/4 cup sugar;
- 2 teaspoons ground cinnamon;
- 1/3 cup melted butter;
- 10 oz (approx. 300g) sliced, sweetened strawberries;
- 1 tablespoon cornstarch;
- 9 oz (250g) cream cheese, softened;
- 1 can (14 oz / 390g) sweetened condensed milk;
- 1/4 cup lemon juice;
- 1/2 teaspoon vanilla extract;
- 3 eggs;
- 1 tablespoon water.
How to make Strawberry Cheesecake:
- In a bowl, mix the graham cracker crumbs, sugar, cinnamon, and melted butter;
- Press the mixture firmly into the bottom of a 9-inch (approx. 22cm) springform pan;
- Refrigerate for 30 minutes;
- Preheat your oven to 300°F (150°C);
- Blend the strawberries and cornstarch in a blender until smooth;
- Pour the strawberry puree into a small saucepan;
- Bring to a boil, stirring constantly until the sauce thickens and becomes glossy, about 2 minutes;
- Set aside 1/3 of the strawberry sauce to cool;
- Cover the remaining sauce and place it in the refrigerator;
- In a mixing bowl, beat the cream cheese until light and fluffy;
- Gradually add the condensed milk, lemon juice, vanilla, and eggs, mixing on low speed;
- Pour half of the cream cheese mixture over the crust, then drizzle with half of the cooled strawberry sauce;
- Spread the remaining cream cheese mixture on top, followed by the remaining cooled strawberry sauce;
- Using a knife, gently swirl the top to create a marbled strawberry effect;
- Bake in the preheated oven for 40 to 50 minutes;
- Carefully remove from the pan and let it cool for one hour;
- If possible, refrigerate overnight;
- Serve the cheesecake topped with the reserved refrigerated strawberry sauce. If the reserved sauce is too thick, thin it with a little water.
