Ingredients for homemade cheese:
- 1 yard of cheesecloth (or cotton gauze from a pharmacy);
- 1 large pot;
- 1 small mold or a 5-inch round ring;
- 1 quart whole milk;
- 1 container (approx. 5-6 oz) plain, unsweetened yogurt;
- 1/2 lemon, juiced.
How to make the easiest homemade cheese:
- Heat the milk in a pot over medium heat for 15 minutes, ensuring it gets hot but does not reach a boil;
- Add the yogurt and the lemon juice to the milk. Stir gently for a few seconds to combine;
- Let the mixture rest for at least 3 hours, until you notice the whey has separated from the curds;
- After this time, line a colander with several layers of cheesecloth;
- Pour the mixture through the cheesecloth, allowing the whey to drain into a bowl or pot, leaving only the curds behind;
- Squeeze the cheesecloth well to remove as much excess whey as possible;
- While the curds are still wrapped in the cloth, place them in a container and set a weight on top to press the cheese;
- Refrigerate for 30 minutes;
- After cooling, open the cheesecloth and add a pinch of salt to taste if desired;
- Transfer the cheese into your mold (or a small bowl) to give it a firm shape;
- Refrigerate for about 8 hours to set completely, and it’s ready to serve;
