Ingredients for the Empadão crust:
- 1.1 lbs (approx. 2 cups + 3 tbsp) salted butter, slightly softened;
- 2 egg yolks (for brushing);
- 2.2 lbs (approx. 7 1/2 cups) all-purpose flour.
How to make the Empadão:
- In a large bowl, mix the all-purpose flour and butter with your hands until you achieve a smooth, homogeneous dough. It is important that the dough reaches a point where it no longer sticks to your hands;
- Divide the dough into two parts;
- Take one portion and line the bottom and sides of a baking dish or a springform pan;
- Add your preferred filling on top of the dough;
- Roll out the second portion of dough with a rolling pin until thin;
- Place it over the filling to seal the pie. If you have any extra dough, cut it into strips and use them to decorate the top;
- Brush the top of the dough with the beaten egg yolks for a golden finish;
- Bake in a preheated oven at 400°F (200°C) for 40 minutes or until golden brown.
