- 3.5 oz (100g) bacon, chopped;
- 2 tbsp extra-virgin olive oil;
- 1 cup onion, finely chopped;
- 2 cloves garlic, minced;
- 1 pinch salt;
- 10.5 oz (300g) green cabbage, shredded;
- 4 cups (1 liter) beef broth;
- 3 tbsp cornstarch;
- 1/3 cup (80ml) cold water;
- Salt to taste;
- 4 tbsp heavy cream;
- Fresh parsley, chopped to taste.
How to Prepare Creamy Cabbage Soup:
- In a large pot, heat the olive oil over medium heat and add the chopped bacon;
- Fry the bacon until crispy. Remove the bacon with a slotted spoon, keeping the rendered fat in the pot. Set the bacon aside;
- Add the onion and garlic to the bacon fat and sauté until softened and translucent;
- Add the pinch of salt and the shredded cabbage to the pot, mixing well;
- Sauté for about 5 minutes, or until the cabbage begins to wilt;
- Pour in the beef broth and the heavy cream. Let the soup simmer over low heat for about 15 minutes, or until the cabbage is tender;
- In a small bowl, whisk the cornstarch with the cold water until smooth;
