Tapioca is a staple ingredient for countless recipes and a healthy choice. Today, we’re using it to make these delicious tapioca rolls. They are very similar to the famous Brazilian cheese bread (pão de queijo), making them the perfect, cozy afternoon snack. Let’s get to the recipe!
Ingredients for Tapioca Rolls:
- 1/4 cup coconut oil;
- 3 cups milk;
- 1 1/2 cups granulated tapioca (tapioca pearls);
- 2 eggs;
- 1/2 cup grated Parmesan cheese;
- 1 1/2 cups sweet manioc starch (sweet cassava flour);
- Salt to taste.
Note: *You must use granulated tapioca (tapioca pearls), not tapioca flour.
How to make Tapioca Rolls:
- First, add the coconut oil to a non-stick pan and melt it completely;
- Remove the pan from the heat, add the milk, and mix well;
- Return to the heat and wait for it to boil;
- Meanwhile, place the granulated tapioca in a mixing bowl;
- Once the milk and coconut oil mixture boils, pour it over the granulated tapioca while still hot;
- Stir everything very well with a wooden spoon;
- Continue mixing until the texture is homogeneous;
- Set this mixture aside to use later;
- In a separate bowl, whisk the eggs;
- Add the whisked eggs to the tapioca mixture, incorporating well;
- Stir in the cheese, salt, and sweet manioc starch;
- Knead the dough well until it becomes smooth;
- Place the dough in a covered container and refrigerate for 6 hours;
- After this time, take the dough out, place it on a surface greased with coconut oil, and cut into individual small roll shapes;
- Grease a baking sheet with coconut oil and a sprinkle of manioc starch;
- Place the rolls on the baking sheet and bake at 350°F (180°C) for 40 to 50 minutes, or until golden brown;
- Check for doneness and remove from the oven;
- Let them cool for a few minutes and enjoy!
Serving Suggestions:
You can turn these into gourmet snacks! When shaping the rolls, flatten them slightly, fill the center with dulce de leche or guava paste, and fold them back into a round shape. It’s delicious—give it a try!
