  • ¾ cup (100g) chopped mozzarella cheese.

  1. In a large bowl, whisk the eggs and salt together until slightly beaten;
  2. Add the milk and continue to whisk by hand;
  3. Stir in the oil;
  4. Gradually add the sour cassava starch, mixing as you go until you reach the desired consistency;
  5. Once the dough becomes heavy, finish mixing it by hand;
  6. Add the Parmesan and mozzarella cheeses, kneading well with your hands to incorporate them evenly into the dough;
