Ingredients for Queijadinha:
- 3 large eggs;
- 1 tbsp melted unsalted butter;
- 1 can (14 oz) sweetened condensed milk;
- 1 package (approx. 3.5 oz) sweetened shredded coconut;
- ½ cup grated Parmesan cheese;
- Paper baking cups (muffin liners);
- Muffin tin (or ramekins).
How to make Queijadinha:
- In a mixing bowl, combine the eggs and melted butter; whisk well.
- Continue whisking until the mixture is smooth and homogeneous.
- Add the sweetened condensed milk, shredded coconut, and grated Parmesan cheese.
- Mix thoroughly until all ingredients are well incorporated.
- Place the paper baking cups inside the muffin tin holes.
- Pour the batter into the paper cups, filling them slightly more than halfway.
- Bake in a preheated oven at 350°F (180°C) for 20 minutes.
- Increase the oven temperature to 400°F (200°C) and bake for an additional 10 minutes until golden brown.
- Once baked, remove the paper cups from the muffin tin to prevent them from becoming soggy. Allow them to cool before serving. Enjoy!
Pro Tip:
If you don’t have individual molds, you can bake this as a single cake. Grease a baking pan with butter and flour, then pour the batter in and bake until set.
