Ingredients for passion fruit pavê:

Passion Fruit Mousse:

  • Pulp of 1 fresh passion fruit;
  • 1 can (14 oz) sweetened condensed milk;
  • 1 can (approx. 7.5 oz) table cream (or heavy cream).

Chocolate Topping (Brigadeiro style):

  • 1/2 cup unsweetened cocoa powder;
  • 1 tbsp unsalted butter;
  • 1 can (14 oz) sweetened condensed milk;
  • 1/2 can (approx. 3.75 oz) table cream (or heavy cream).

Assembly:

  • 1 package (7-8 oz) Maria cookies (or digestive biscuits);
  • 1/2 cup whole milk (for dipping).

How to prepare the passion fruit pavê:

  1. In a saucepan, combine the sweetened condensed milk, cocoa powder, and butter.
  2. Cook over medium heat, stirring constantly until it begins to thicken.
  3. Once the chocolate mixture (brigadeiro) starts pulling away from the bottom of the pan, turn off the heat, stir in the table cream until smooth, and set aside.
  4. In a blender, combine the sweetened condensed milk, table cream, and the passion fruit pulp.
  5. Blend for about 3 minutes until smooth and aerated. Set aside.
  6. Briefly dip the Maria cookies in the milk (do not soak them) or crumble them if preferred, according to your preference for texture.
  7. In a glass serving dish, begin assembling the dessert.
  8. Start with a layer of the passion fruit mousse, followed by a layer of cookies, and then the chocolate topping.
  9. Repeat the layers until all ingredients are used, finishing with a final layer of chocolate.
  10. Refrigerate for at least 3 hours before serving. Enjoy!
