Caldo Verde Ingredients:

  • 4 large potatoes (peeled and chopped)
  • 1 yellow onion
  • 2 cloves of garlic
  • 4 cups collard greens, thinly sliced (chiffonade)
  • 2 to 3 tablespoons extra-virgin olive oil
  • Water (enough to cover the vegetables)
  • Salt to taste
  • 1 smoked sausage (like linguiça or chorizo), sliced

How to Make Caldo Verde:

1 In a large pot, add enough water to cover the potatoes, garlic cloves, and onion pieces. Season with salt.

2 Bring to a boil. Once the vegetables are tender and starting to break down, remove from heat and blend until smooth using an immersion blender or a traditional blender. Taste and adjust salt if needed.

3 Return the pot to the stove. Add the sliced collard greens and the smoked sausage. Cook for another 10 minutes with the pot uncovered, which helps the greens retain their vibrant color. Stir occasionally.

4 Turn off the heat and stir in the extra-virgin olive oil. Serve hot and enjoy!
