Ingredients for the Chicken Crepioca:

  • 1 tablespoon tapioca flour (tapioca starch);
  • 2 eggs;
  • Salt to taste;
  • Fresh chives to taste;
  • Tomato sauce to taste;
  • 1 tomato, chopped;
  • Shredded chicken, cooked and seasoned;
  • Mozzarella cheese to taste;
  • Cream cheese or Catupiry (optional) to taste.

How to make Chicken Crepioca:

  1. In a bowl, beat the eggs until well combined;
  2. Add the tapioca flour and whisk until smooth;
  3. Stir in the salt and chopped chives;
  4. Heat a non-stick skillet over low heat and pour in the batter;
  5. While the crepe is browning, warm up your shredded chicken and chopped tomatoes in a separate pan;
  6. Once the bottom of the crepioca is golden, flip and brown the other side;
  7. Transfer the crepioca to a plate and add the chicken and tomato filling;
  8. Roll up the crepioca and spread some cream cheese on top;
  9. Drizzle with tomato sauce;
  10. Finish by topping with shredded mozzarella cheese.
