Smoky Calabresa Sausage Spread

Today we are going to make a wonderful smoky calabresa sausage spread, perfect to serve as an appetizer, for breakfast, as a side for meats, in a sandwich, or even just on its own. Let’s get to the recipe!

Ingredients for our Smoky Sausage Spread:

  • 1 small jar (approx. 1 cup) of mayonnaise;
  • 1 onion, diced;
  • 1 large clove of garlic, minced;
  • 1 tablespoon extra-virgin olive oil;
  • 2 links of smoked calabresa sausage (or Spanish chorizo), cut into medium cubes;
  • 1 can (approx. 10 oz) table cream (creme de leite).

How to prepare the Smoky Sausage Spread:

  1. In a pan, heat the olive oil over medium heat;
  2. Add the sausage and fry until golden and crispy;
  3. Once the sausage is fried, add the onion and garlic;
  4. Sauté well until fragrant and remove from heat;
  5. Let the mixture cool down completely;
  6. Transfer the mixture to a blender or food processor and pulse until it forms a smooth paste;
  7. Transfer the paste to a mixing bowl, then stir in the mayonnaise and table cream;
  8. Mix well until creamy, refrigerate, and serve chilled with your favorite bread or crackers.
