Ingredients for this Baked Cod Casserole:

  • 12 oz (approx. 350g) shredded salt cod (bacalhau);
  • 1 onion, finely chopped;
  • Fresh parsley and scallions, chopped;
  • 2 oz (approx. 50g) bacon, diced;
  • Salt to taste;
  • Black pepper to taste;
  • 2 cloves garlic, minced;
  • 2 tablespoons extra-virgin olive oil;
  • 10 oz (approx. 300g) potatoes, boiled and mashed;
  • 8 oz (1 cup) creamy cheese spread (such as cream cheese or Brazilian requeijão);
  • 5 oz (approx. 150g) grated Parmesan cheese.

How to prepare the baked codfish casserole:

  1. Cook the cod, let it cool slightly, shred it, and set aside;
  2. In a pan, fry the bacon until crispy and set aside;
  3. In the same pan, sauté the garlic and onion in the olive oil;
  4. In a bowl, combine the shredded cod, sautéed garlic and onion, fried bacon, salt, black pepper, fresh herbs, and the creamy cheese spread. Mix gently;
  5. Prepare a smooth mashed potato base and divide it into two portions;
  6. In a baking dish, spread one layer of mashed potatoes and top with the cod filling;
  7. Cover with the remaining mashed potatoes;
  8. Sprinkle the grated Parmesan cheese on top;
  9. Bake in a preheated oven at 350°F (180°C) until the cheese is golden and bubbly;
