Ingredients for this Baked Cod Casserole:
- 12 oz (approx. 350g) shredded salt cod (bacalhau);
- 1 onion, finely chopped;
- Fresh parsley and scallions, chopped;
- 2 oz (approx. 50g) bacon, diced;
- Salt to taste;
- Black pepper to taste;
- 2 cloves garlic, minced;
- 2 tablespoons extra-virgin olive oil;
- 10 oz (approx. 300g) potatoes, boiled and mashed;
- 8 oz (1 cup) creamy cheese spread (such as cream cheese or Brazilian requeijão);
- 5 oz (approx. 150g) grated Parmesan cheese.
How to prepare the baked codfish casserole:
- Cook the cod, let it cool slightly, shred it, and set aside;
- In a pan, fry the bacon until crispy and set aside;
- In the same pan, sauté the garlic and onion in the olive oil;
- In a bowl, combine the shredded cod, sautéed garlic and onion, fried bacon, salt, black pepper, fresh herbs, and the creamy cheese spread. Mix gently;
- Prepare a smooth mashed potato base and divide it into two portions;
- In a baking dish, spread one layer of mashed potatoes and top with the cod filling;
- Cover with the remaining mashed potatoes;
- Sprinkle the grated Parmesan cheese on top;
- Bake in a preheated oven at 350°F (180°C) until the cheese is golden and bubbly;
