Cake Batter:
- Preheat your oven to 350°F (180°C);
- In a blender, add the eggs, oranges, and coconut oil and blend well;
- Add the xylitol and blend until combined;
- Transfer the mixture to a large bowl;
- Sift in the oat flour gradually;
- Mix well until you have a smooth batter;
- Gently fold in the baking powder;
- Grease a cake pan with coconut oil and oat flour, then pour the batter in;
- Bake for 45 minutes at 350°F (use a toothpick to check for doneness).
Glaze:
- In a small saucepan, combine the orange juice, xylitol, and cornstarch;
- Whisk until smooth;
- Cook over medium heat, stirring constantly, until thickened;
- Once thick, remove from heat and set aside.
Assembly:
- Once the cake is baked, let it cool slightly before unmolding;
