- 1 can (approx. 5 oz) heavy cream (table cream);
- Meyer lemon zest, to taste.
How to make Pineapple Jelly:
- Wash the pineapple thoroughly as you usually do;
- Peel the pineapple and save the peels;
- In a pot, bring the pineapple peels and 8.5 cups (approx. 2 liters) of water to a simmer over low heat. Let it cook for about 2 minutes, then strain and set the liquid aside;
- Cut the peeled pineapple into medium-sized cubes;
- In a saucepan, combine the pineapple-infused water (discard the peels), the cubed pineapple, sugar, and white wine;
- Bring to a simmer over low heat and cook for about 7 minutes;
- Using a sieve, transfer the hot liquid to a large container;
- Follow the package instructions to dissolve the pineapple gelatin using this warm pineapple liquid;
- Stir in the pineapple cubes, let the mixture cool to room temperature, and then refrigerate until set;
- Before serving, whisk the heavy cream until smooth and pour it over the chilled jelly;
- Garnish with fresh Meyer lemon zest for the perfect finishing touch;
