Ingredients for Fresh Green Bean Casserole with Bacon:

  • 4 cups fresh green beans;
  • 6 strips of bacon, cooked and chopped (about 1/2 cup);
  • 1 ¾ cups crispy fried onions;
  • 3 cloves garlic, minced;
  • 1 medium yellow onion, thinly sliced;
  • 6 tablespoons salted butter;
  • ½ cup all-purpose flour;
  • 1 cup chicken broth;
  • 1 ½ cups milk;
  • ½ cup heavy cream;
  • ½ teaspoon salt;
  • ¼ teaspoon black pepper.

How to Make Fresh Green Bean Casserole:

  1. Preheat your oven to 350°F (175°C);
  2. Fill a large bowl with ice water and set aside;
  3. Grease a baking dish and set aside;
  4. Bring a large pot of salted water to a boil;
  5. Add the green beans to the boiling water and blanch for 2-3 minutes until they are bright green;
  6. Remove the beans and immediately place them in the ice water bath to stop the cooking process;
  7. Once cooled, drain the green beans well and set aside;
  8. In a large saucepan, melt the butter over medium heat. Add the sliced onion and garlic;
  9. Sauté for about five minutes, stirring frequently, until the onions are soft and translucent;
  10. Stir in the flour and cook over medium-low heat for one minute until it starts to turn golden;
  11. Slowly whisk in the chicken broth, ensuring the liquid is smooth and the flour is fully dissolved;
  12. Gradually whisk in the milk and heavy cream, continuing to stir until combined;
  13. Add the salt and black pepper. Taste and adjust seasoning if needed;
  14. The sauce should have the consistency of a creamy soup. If it’s too thick, add a little extra chicken broth until smooth and creamy;
  15. Place the green beans into the prepared baking dish;
  16. Pour the creamy sauce over the beans and toss gently. Stir in the bacon and half of the crispy fried onions;
  17. Cover with aluminum foil and bake for 30 minutes until hot and bubbly;
  18. Remove the foil, top with the remaining crispy onions, and bake for another 10 minutes until golden and bubbling. Serve and enjoy!
