Ingredients for Shrimp & Lemon Pappardelle:

  • 8.8 oz (250g) pappardelle pasta;
  • 10.5 oz (300g) medium shrimp, peeled and deveined;
  • Juice and zest of 1 Sicilian lemon;
  • 2 garlic cloves, minced;
  • ½ small onion, diced;
  • ½ cup dry white wine;
  • ½ cup heavy cream;
  • 2 tbsp unsalted butter;
  • 2 tbsp extra-virgin olive oil;
  • Salt and black pepper to taste;
  • Grated Parmesan cheese for garnish;
  • Fresh basil leaves for decoration.

How to prepare Shrimp & Lemon Pappardelle:

  1. Bring salted water to a boil in a large pot and cook pappardelle until al dente;
  2. Drain and set aside;
  3. In a large skillet, heat olive oil over medium-high heat;
  4. Add shrimp and season with salt and pepper;
  5. Cook shrimp for about 2 minutes per side until pink, then remove and set aside;
  6. In the same skillet, add butter and more olive oil;
  7. Sauté garlic and onion until tender and aromatic;
  8. Pour in white wine and let it reduce slightly;
  9. Add lemon juice and zest, stirring well;
  10. Reduce heat to medium-low and incorporate heavy cream;
  11. Mix until the sauce thickens and is smooth, then season with salt and pepper;
  12. Return shrimp to the skillet and add cooked pappardelle;
  13. Gently toss to coat everything in the sauce;
  14. Serve in individual plates, topped with grated Parmesan and fresh basil. Enjoy!
