Ingredients for Shrimp & Lemon Pappardelle:
- 8.8 oz (250g) pappardelle pasta;
- 10.5 oz (300g) medium shrimp, peeled and deveined;
- Juice and zest of 1 Sicilian lemon;
- 2 garlic cloves, minced;
- ½ small onion, diced;
- ½ cup dry white wine;
- ½ cup heavy cream;
- 2 tbsp unsalted butter;
- 2 tbsp extra-virgin olive oil;
- Salt and black pepper to taste;
- Grated Parmesan cheese for garnish;
- Fresh basil leaves for decoration.
How to prepare Shrimp & Lemon Pappardelle:
- Bring salted water to a boil in a large pot and cook pappardelle until al dente;
- Drain and set aside;
- In a large skillet, heat olive oil over medium-high heat;
- Add shrimp and season with salt and pepper;
- Cook shrimp for about 2 minutes per side until pink, then remove and set aside;
- In the same skillet, add butter and more olive oil;
- Sauté garlic and onion until tender and aromatic;
- Pour in white wine and let it reduce slightly;
- Add lemon juice and zest, stirring well;
- Reduce heat to medium-low and incorporate heavy cream;
- Mix until the sauce thickens and is smooth, then season with salt and pepper;
- Return shrimp to the skillet and add cooked pappardelle;
- Gently toss to coat everything in the sauce;
- Serve in individual plates, topped with grated Parmesan and fresh basil. Enjoy!
