  • 1 tsp paprika
  • 1 tsp dried red pepper flakes
  • 1 tsp black pepper
  • 1 tbsp mayonnaise (the secret for tenderness)
  • 1 large onion, thinly sliced into half-moons
  • 2-3 tomatoes, diced
  • Extra-virgin olive oil or vegetable oil for sautéing

How to Make Liver and Onions:

  1. Start by cleaning the liver: place it in a bowl with enough water to cover it.
  2. Add 2 teaspoons of salt to the water and, if preferred, squeeze half a lemon or add 2-3 tablespoons of vinegar. Mix well.
  3. Let the liver soak in this solution for 5 minutes.
  4. After soaking, drain the water and rinse the liver well to remove any strong odor.
  5. In a bowl, season the liver with the remaining salt, garlic, Tempero Baiano, paprika, red pepper flakes, black pepper, and the tablespoon of mayonnaise. Mix well to ensure all seasonings are evenly distributed.
