- 10.5 oz (300g) dried salted beef (carne seca), diced
- 1 medium smoked sausage (e.g., Linguiça or Kielbasa), approx. 9 oz (250g)
- 1 medium onion, diced
- 1 medium bell pepper, diced
- 2 cloves garlic, minced
- ¾ cup (140g) long-grain white rice
- Black pepper to taste
- 2 cups (480ml) hot water
- ½ tsp salt
- ⅓ tsp smoked paprika
- 1 cup cooked green beans (al dente)
- 1 medium tomato, diced
- 2 tbsp fresh cilantro or parsley, chopped
- 3.5 oz (100g) mild cheese in cubes (Queijo Coalho or Monterey Jack)
How to make Brazilian Baião de Dois:
- Heat the oil in a large pot and fry the bacon until golden and crispy. Remove the bacon and set aside. In the same fat, fry the dried salted beef until golden, then set aside as well.
- In the same pot, add the smoked sausage and fry until lightly browned. Add the onion and bell pepper, sautéing until soft.
- Stir in the garlic and rice, sautéing for about 2 minutes over low heat. Season with black pepper. Add the hot water, salt, and smoked paprika. Simmer for about 10–12 minutes, or until the rice is tender and the water is absorbed.
- Once the rice is cooked, fold in the reserved bacon, dried beef, sausage, onions, and peppers. Mix gently.
- Gently stir in the cooked green beans, diced tomatoes, and cilantro or parsley. Finish by folding in the cubed cheese.
