Ingredients for Dobradinha with White Beans:

  • 1 leek, finely chopped;
  • 1 large carrot, grated;
  • 1 red bell pepper, chopped;
  • 1/4 fresh red chili pepper (such as Fresno), minced;
  • Black pepper to taste;
  • 1 tsp paprika;
  • 1 tsp dried fine herbs (herbes de Provence or similar);
  • 1 tsp “Tempero Baiano” (or a mix of oregano, cumin, and chili powder);
  • Salt to taste;
  • 1.1 lbs (500g) smoked sausage (like Linguica or Kielbasa), sliced;
  • 1 lb (approx. 500g) dry white beans;
  • 12 fresh basil leaves;
  • Fresh parsley to taste;
  • Fresh scallions to taste;
  • 4.4 lbs (2kg) beef honeycomb tripe;
  • 2 lemons (for cleaning the tripe);
  • 2 tbsp annatto powder (colorau);
  • 10.5 oz (300g) bacon, chopped;
  • 2 tbsp minced garlic;
  • 2 medium onions, chopped.

How to Make Authentic Brazilian Dobradinha:

  1. Start by preparing the tripe: Cut the honeycomb tripe into small, bite-sized pieces;
  2. Place the pieces in a large pot with water and the juice of the 2 lemons;
  3. Bring to a boil and let it simmer for about 15 minutes;
  4. Drain the water and set the tripe aside;
  5. In a separate pot, cook the white beans in salted water until tender;
  6. Drain and set aside;
  7. In a large Dutch oven or heavy-bottomed pot, fry the bacon until crispy;
  8. Add the garlic, onions, leek, carrot, red bell pepper, and chili pepper. Sauté for about 10 minutes until softened;
  9. Add the sliced smoked sausage and cook for a few more minutes to brown slightly;
  10. Stir in the pre-cooked tripe and season with paprika, fine herbs, “Tempero Baiano,” black pepper, and salt;
  11. Mix well and simmer for about 20 minutes to develop the flavors;
  12. Add the cooked white beans to the pot and combine;
  13. Toss in the fresh basil, parsley, and scallions;
  14. Finally, stir in the annatto powder for color and depth;
  15. Let it cook for a few more minutes until all ingredients are perfectly melded;
  16. Serve hot and enjoy!
