Ingredients for the Beetroot Burger:
- 1 medium beetroot, peeled and chopped into small pieces;
- 1 small onion, finely chopped;
- 5 raw cashews;
- 2 mint leaves;
- Fresh parsley and scallions to taste;
- 1 cup breadcrumbs (whole wheat is even better);
- 1/4 cup water;
- Salt to taste;
- Extra-virgin olive oil.
How to Make the Beetroot Burger:
- First, process the cashews in a blender or food processor until ground;
- Add the beetroot pieces and the water, and blend until you reach a paste consistency;
- Now, add the onion, mint, parsley, scallions, and breadcrumbs, and mix well;
- Transfer this mixture to a fine-mesh strainer to remove the excess liquid from the beets;
- The goal is for the paste to be moist but not runny; if it is too wet, it will be impossible to shape;
- If the mixture doesn’t hold its shape, add a little more breadcrumbs until it reaches the right texture;
- Adjust the salt to your liking;
- Shape into burger patties;
- Grease a skillet with olive oil or butter and grill the burgers for approximately 5 minutes on each side;
- Try to create a nice crust on both sides so they don’t fall apart;
