Ingredients for Oat and Flaxseed Crackers:

  • 2 tablespoons ground flaxseed (you can use either brown or golden flaxseed);
  • 1/2 cup oat flour;
  • 2 tablespoons extra-virgin olive oil;
  • 1 pinch of salt;
  • 1/4 teaspoon baking powder (standard US “coffee spoon” equivalent);
  • Seasonings of your choice (herbs, garlic powder, etc.);
  • 4 tablespoons water.

How to Make Oat and Flaxseed Crackers:

  1. First, grind the flaxseed in a blender until you have a fine meal;
  2. In a mixing bowl, combine all ingredients until a dough forms;
  3. Lightly dampen your hands with water;
  4. Roll the dough into small balls and place them on a baking sheet lined with parchment paper;
  5. Gently flatten each ball with your hand to create a cracker shape;
  6. Bake in a preheated oven at 350°F (180°C) for about 15 to 20 minutes;
  7. All done! This batch makes about 30 small crackers;
  8. Once the crackers have cooled completely, store them in an airtight container;
  9. They will stay fresh for about 6 days.

Tips:

Feel free to add other grains or seeds to the dough. You can also swap the oat flour for whole wheat flour or coconut flour.

The word “biscuit” (or “biscoito” in Portuguese) comes from the Latin biscoctus, meaning “twice-cooked.” It originally referred to a confection made from flour, sugar, and a fat or liquid, baked again to ensure a crunchy texture with very low moisture content—typically below 5%.
