Ingredients for Stuffed Bell Peppers:
- 6 Bell peppers (various colors);
- 1 lb Ground beef;
- Salt to taste;
- Black pepper to taste;
- 1/4 cup Fresh parsley and scallions, finely chopped;
- 1 Onion, finely diced;
- 2 Tomatoes, diced;
- 2 Garlic cloves, minced;
- 1 cup Cooked white rice;
How to Make Stuffed Bell Peppers:
- Wash the bell peppers, cut off the tops, and carefully remove the seeds and membranes. Set aside.
- In a skillet, sauté the ground beef with olive oil, salt, pepper, herbs, garlic, and onion.
- Cook until browned.
- Once the meat is mostly dry, add the diced tomatoes and simmer until a thick sauce forms.
- Stir in the cooked rice until well combined.
- Stuff each bell pepper with the meat and rice mixture.
- Place the peppers in a baking dish, cover with their tops, and bake at 350°F (180°C) just until tender and heated through.
