Ingredients for Cabbage Lasagna:
- 1 (14.5 oz) can of chopped tomatoes;
- 2 minced garlic cloves;
- 1/2 chopped onion;
- 1 large grated carrot;
- Fresh parsley to taste;
- Salt to taste;
- Extra-virgin olive oil to taste;
- Black pepper to taste;
- Paprika to taste;
- 1 large cabbage head;
- 1.1 lbs lean ground beef;
- 10.5 oz shredded mozzarella cheese.
How to Prepare Cabbage Lasagna:
- In a large skillet, heat olive oil and sauté the onion and garlic;
- Cook until lightly browned;
- Add ground beef and season with salt and black pepper. Cook until browned;
- Meanwhile, in a blender, puree the grated carrot and chopped tomatoes into a sauce. Set aside;
- In a large pot, bring water to a boil (this will be used to blanch cabbage leaves);
- Once the beef is cooked, add the puree and adjust seasoning;
- Finish the sauce with fresh parsley and set aside;
- Blanch cabbage leaves in boiling water for 30 seconds, then drain;
- In a baking dish, start layering the lasagna;
- Spread a layer of sauce, followed by cabbage leaves and mozzarella;
- Repeat layers, finishing with a top layer of mozzarella;
- Bake at 350°F (180°C) for 30 minutes. Serve warm.
