The cake everyone wants a second slice of—today’s recipe is a delicious caramelized apple upside-down cake!
Ingredients for the caramelized apple cake:
For the caramel sauce:
- 1/2 cup water;
- 1 cup granulated sugar.
For the cake batter:
- 1 tablespoon baking powder;
- 3 apples, thinly sliced;
- 1 cup granulated sugar;
- 3 large eggs;
- 1 teaspoon ground cinnamon;
- 1 cup whole milk;
- 2 cups all-purpose flour;
- 1/2 cup vegetable oil.
How to make caramelized apple cake:
- Start by preparing the caramel directly in the cake pan or in a small saucepan over medium heat; add the sugar.
- Reduce to low heat and stir constantly. Once the sugar has completely melted into a golden amber color, carefully add the water (be careful, it may bubble and splatter).
- Keep stirring until the water and caramel are perfectly combined.
- Remove from heat and spread the caramel evenly across the bottom and sides of the cake pan.
- Arrange the apple slices on top of the caramel and set aside.
- Make sure all cake ingredients are at room temperature.
- In a large bowl, whisk the eggs and sugar until pale and creamy.
- Add the oil and mix until well combined.
- Gradually stir in the flour, milk, and cinnamon until the batter is smooth.
- Finally, fold in the baking powder and pour the batter over the caramelized apples in the pan.
- Bake in a preheated oven at 350°F (180°C) for approximately 45 minutes, or until a toothpick inserted into the center comes out clean.
- Unmold the cake while it is still warm; if it cools down too much, the caramel might stick to the bottom of the pan.
Tips:
You can substitute apples for pears—it’s just as delicious! Also, the cinnamon is optional if you prefer a simpler flavor profile.
